Cedar Meadow Farm Drunken Chicken
You will need 1 can/bottle of beer, a preheated oven or grill at 350 degrees, olive oil and spices.
Rub the chicken with olive oil and salt and pepper or any other spices you like. Place the bottle or can into the chicken's cavity. Sit the chicken on the beer can/bottle with the wings on top, legs pointed down. Balance your bird and can/bottle in a roasting pan (for oven) or place directly on the grill. This part can be challenging, the first time I did it, it toppled over and the beer emptied into the grill, cute huh? If you have a three burner grill turn off the center burner and cook on indirect heat. One hour at 350 usually does it. Internal temp should be 165 degrees. Remove from heat, remove beer can/bottle and let it rest for 5-10 minutes to cool and let the juices retreat into the meat. Carve and eat. Yum.
